Foodie Friday: Shrimp and Avocado Salad

This is one of my favorite seafood salads— it’s easy to prepare, visually appealing, and full of flavor! Perfect for a mid day snack or a light lunch, you’ll find this dish to be the perfect addition to your spring menu.. (It’s also gluten free!) This recipe is courtesy of,


Shrimp and avocodo salad


  • 1 lb cooked jumbo shrimp
  • 1 avocado- diced
  • 1 jalapeno- diced
  • 1 tsp chopped cilantro
  • 1/4 cup chopped red onion
  • 1 medium tomato- diced
  • 2 limes- juiced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp olive oil


Mix all ingredients together in a large bowl and chill. Keep refrigerated until ready to serve. *Try eating with crispy tortillas for extra crunch
