Foodie Friday: Shrimp and Avocado Salad

This is one of my favorite seafood salads— it’s easy to prepare, visually appealing, and full of flavor! Perfect for a mid day snack or a light lunch, you’ll find this dish to be the perfect addition to your spring menu.. (It’s also gluten free!) This recipe is courtesy of skinnytaste.com,

 

Shrimp and avocodo salad

Ingredients:

  • 1 lb cooked jumbo shrimp
  • 1 avocado- diced
  • 1 jalapeno- diced
  • 1 tsp chopped cilantro
  • 1/4 cup chopped red onion
  • 1 medium tomato- diced
  • 2 limes- juiced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp olive oil

Directions:

Mix all ingredients together in a large bowl and chill. Keep refrigerated until ready to serve. *Try eating with crispy tortillas for extra crunch

Laundry Room Reveal!

One of my least favorite household tasks, hands down, is doing laundry. I absolutely hate what seems to be endless cycles of sorting, washing, and folding. In an attempt to make this daunting chore a bit more enjoyable, I decided to completely makeover the space.

Here is a photo of what the room looked like when we first moved in:

It was dark, it was drab, and it was down right depressing.

Well, not anymore! Here’s how the space looks now:

HUUUGGGEEEE difference! I absolutely love the transformation!

The first thing that definitely had to go was the dingy beige. I knew that I wanted to brighten up the space and since I am obsessed with blue (the color I’ve chosen for the majority of our house), that’s the initial direction my mind went in.

However, Mr. H quickly vetoed this color choice and  expressed that he thought a pop of color would be fun. So we picked a more daring color on the wheel- yellow!

I’m actually glad we went in this direction! Totally not something I would have typically done.

Once we had the color selection down, we still wanted to have some more fun with the space.  I’d been toying with the idea of painting stripes and decided that this was the perfect room for this project.

Once the stripes were up, we got our washer and dryer out of storage and added a few accessories.

I think I may actually be inspired to start my spring cleaning and put this space to use!
